I used to love tuna but wanted to find a recipe that I would enjoy so I #veganized it.
Ingredients
▢ 1 Loma Linda Tuna can
▢ 2-3 tablespoons Earth Balance Mayo
▢ 1 teaspoon pepper
▢ 1 teaspoon salt
▢ 1 teaspoon cilantro flakes
▢ 1-2 tablespoon of organic extra virgin olive oil
▢ 5-7 cherry tomatoes
▢ 1 small yellow bell pepper
▢ 1 red onion
▢ 1 cucumber
▢ 1 avocado
▢ 1 stalk of celery
▢ vegan friendly bread of your choice 🙂
Directions
1. Chop the veggies – I would cut enough to fill 1/4-1/3 cup of each.
2. Pour the vegan tuna into a mixing bowl and the chopped veggies.
3. Pour the 2 tbsp of olive oil and add the salt, pepper, and cilantro seasonings.
4. Add the 2-3 tbsp of vegan mayo and mix all of the contents together until the mayo is well blended.
5. Slightly toast/warm your bread, spread the tuna salad onto the bread, and you have a delicious vegan tuna salad sandwich! 🙂 (seriously that easy!)
6. Now you’re ready to enjoy! 🙂
